Gluten Free Peanut Butter Cookies

Ok, so I'm not Gluten Free, but my friend is! I came across this amazing cookie recipe when I was trying to find something tasty I could make for her, and I enjoyed it so much I thought I'd share! They're ridiculously easy to make and are so much better than regular Peanut Butter cookies! Get ready for chewy, peanut buttery goodness! Enjoy!!



Ingredients:
1 generous cup of Peanut Butter (I prefer crunchy, but any style will do.)
3/4 cup sugar, plus extra for rolling dough
2 eggs

Directions:
Mix all ingredients together until blended. Scoop dough into desired size, roll in extra sugar and place on parchment paper lined cookie sheet. Bake at 350 degrees for about 12 minutes or until golden brown. Cool cookies on wire rack.

That's it! They're so delicious, you won't go back to your normal PB cookie recipe! Happy Baking!

*I got this basic recipe from www.allrecipes.com. I did, however, alter the portions of each ingredient. The recipe originally called for 1 cup PB, 1 cup sugar and 1 egg. After making the first batch, I realized a little adjusting needed to be done, ending up with the best PB cookie recipe ever!
